Raw honey can crystallize easily, especially in lower temperatures. That's one of the ways you can tell it's real and Raw! Our honey has not been pasteurized, watered down with corn syrup, or mixed with any number of chemicals to ensure its consistency and shelf stable viscosity that store-bought honey has gone through. Not only is this real raw honey, it's from a local source, and supporting your local beekeepers. Many of our customers prefer a crystallized form, and even ask for it. If this is not you, and you want it liquid, just place the jar in hot water for an hour or so, or place it on your dashboard on a sunny day. It is fairly easy to warm back to a liquid state. Enjoy!
